For almost 50 years we have been demonising saturated fats whilst the consumption of refined carbohydrates has steadily risen.

We have gotten this hypothesis badly wrong and it is time to change.

The rising incidence in diabetes, obesity, heart disease and ill-health can be traced back to insulin resistance.

Insulin resistance is caused by carbohydrates, not saturated fats.

When carbohydrates are restricted, insulin levels drop, weight reduces, blood sugars normalise, the need for medication reduces, inflammation decreases and overall health improves.

I do encourage patients to test for specific blood parameters before they start diet modification so this can be monitored as your health improves.
